Monsoon Snacks – 15 | Corn Fritters with Roasted Bell Pepper Sauce

Corn Fritters with Roasted Bell Pepper Sauce is one of the best monsoon snacks with a spicy sauce. This will make you eat more than one. Try this and enjoy.

Ingredients:

  •  corn on the cob – 150 gm
  •  small onion, chopped – 1
  •  garlic cloves – 2
  •  green chillies – 2
  • baking powder – 1 tsp
  •  baking soda – 1/2 tsp
  •  polenta – 1 Tbsp
  • Besan (gram flour) – 1 Tbsp
  •  Maida – 1 Tbsp
  •  cumin powder – 1/2 tsp
  •  olive oil – 1 Tbsp
  • vegetable oil for frying – 4-5 Tbsp
  • smoked paprika – 1 big pinch
  • parsley, chopped – 1 tsp
  •  milk – 2 Tbsp
  •  red chilly powder -1 tsp
    For the Sauce:
  • 1 red bell pepper
  • Salt and pepper to season
  • 2-3 tsp of olive oil
  • 1-2 tsp of red wine vinegar
  • 1 pinch of smoked paprika
  • 2-3 cloves of garlic

Procedure:

  1. Take a pan and saute sweat chopped onions, garlic, corn kernels and chillies for 2 minutes.
  2. Transfer this into a deep bowl and add polenta, maida, besan, baking powder, baking soda, cumin powder and paprika blits and make a stiff dough. Add a little milk if it is too dry.
  3. Now, shape into small balls and deep fry until crispy brown.
  4. Serve with a roasted bell pepper sauce.
    For the Sauce:
  5. Take a red bell pepper and rub it with salt, pepper and olive oil.
  6. Place it in the oven and roast it at 180 degrees Celsius or char on a grill.
  7. Now, transfer into a bowl and cover with cling film.
  8. Peel off the skin and slice into two and de-seed.
  9. Now, make the puree the peppers along with garlic, salt, pepper, white pepper and
    paprika into a thick sauce.
